hello there, again and an ode to autumn.

My summer hasn’t been that lousy, but it hasn’t been filled with a lot of cooking. It has been filled more with eating, which is not a bad thing considering there’s a new food truck every month or so.

I have been made this salad (more like a slaw) twice and I’m very lucky if I have leftovers, and even luckier if I get to be the one to eat the leftovers! It is the quintessential fall salad- filled with apples and broccoli and carrots in season, with the dried cranberries hinting at the next holiday to come. Add your favorite protein (quinoa patties in my case, but Oktoberfest sausages such as bratwurst would work well) and you have a complete meal.

Broccoli Slaw (adapted from the bag of Trader Joe’s Broccoli Slaw)

  • 1 head broccoli, chopped, (from Maple Spring Farm) or a bag of Trader Joe’s broccoli slaw mix
  • 1-2 carrots, grated
  • 1 cup chopped apple (honeycrips are very good here)
  • 1/4 heaping cup dried cranberries
  • 1/4 heaping cup of chopped walnuts
  • 1 small red onion, sliced (a variety called Candy Red from Small Potatoes Farm)

Dressing (adapted from The Kitchn)

  • 1/2 cup mayonaise (I use Spectrum Olive Oil Mayonaise)
  • juice of 1 lemon
  • 2 TB apple cider vinegar
  • one long squeeze of agave nectar (about 1 TB) or 2 TB sugar
  • 1 tsp salt
  • freshly ground pepper
  1. Combine slaw ingredients together.
  2. Whisk all the dressing ingredients and pour over the slaw.
  3. Mix well and let chill in fridge for about 30 minutes or so to let flavors set.

Little Quinoa Patties (from Super Natural Every Day)

Modifications:

  • 3/4 cup fine cornmeal instead of breadcrumbs
  • 1/2 cup chopped kimchi (or 1-2 TB of soy sauce and sriracha to taste)

Make sure the quinoa batter is not too wet or dry- try frying one patty at first. If there is liquid pooling at bottom then the mixture is too wet, so stir in more cornmeal. If the patty crumbles easily in your hands, then the mixture is too dry, so add some water. Don’t be afraid to experiment!
