dinner: leftover cabbage and carrot soup with farro

Monday:

celery root soup with octopus salad and a trio of crostini (mushrooms, honey and goat cheese with black pepper, mozarella with roasted tomato) @Toast

Tuesday:

tofu burritos @Carrburritos

Wednesday:

tofu, shake and bake style

“shake and bake” tofu and buttered broccoli

Thursday:

Dumplings with noodles @Chirba Chirba

I have been cooking a lot from this book, La Dolce Vegan, by Sarah Kramer. The recipes she provides for tofu have been helpful, as I’m trying to branch out from my usual braised tofu (though it is soooo good).
